Il Tratturo is a young business based on ancient traditions and techniques obtained through generations of experience in sheep raising and cheese making. All our cheeses are made exclusively with fresh sheep milk obtained only by natural grazing herds, and using age-old recipes and procedures passed on through the years.
Raw, whole milk is processed within 24 hours of hand-milking our herds which are amongst the last in Italy who still follow the times and seasons of the ancient transhumant routes in Abruzzi.
Our cheeses are ripened slowly and naturally in natural micro-habitats. Aging can range from three months up to two years and each piece is checked and cured daily.
The result is an authentic and natural 100% pecorino cheese with an unmistakable aroma and flavour.
